To encourage toddlers to eat turkey, why not make these crispy turkey fingers? As a fun element, pop them in an ice-cream stick or a blunt kebab stick – kids will love the “food on the go” idea.
2 turkey breasts, thinly sliced
1 cup / 250ml plain yogurt
1 cup crushed Cornflakes
Roll turkey strips in yogurt and then coat them in crushed cornflakes.
Bake on a lightly greased baking sheet at 180° for 15 – 20 minutes or until cooked and slightly browned.
Serve with a dipping sauce or gravy and veggies.
• For more adventurous eaters, add a couple of tablespoons of dukka spice mix (sesame, cumin, coriander and nuts) to the crushed Cornflakes.
• For even more flavour, marinate the turkey breasts in olive oil, with the juice and zest of one lemon, and a couple of tablespoons of Ina Paarman’s Olive & Rosemary Seasoning ( salt -free)
• For a grown up variation for year-end cocktail parties or a light snack, serve the turkey strips in individual ramekins with a dollop of sweet chilli or plum sauce and mini forks.
