Halloween muffins

Although Halloween’s a holiday that’s not officially celebrated in South Africa, it’s still fun to dress up the kids to go trick or treating and make fun treats in the kitchen. Try these easy Halloween muffins, compliments of Annabel Karmel.

Monster muffins

*Makes 12 monster muffins

You can have fun decorating these tasty cupcakes to look like monsters.

Ingredients

  • 110g butter, softened
  • 110g caster sugar
  • 110g self-raising flour
  • 2 medium eggs
  • ¼ tsp salt
  • 1 tsp vanilla essence

Decoration

  • 1 tub vanilla frosting
  • Green food colouring
  • White fondant icing
  • Black fondant icing (or colour white fondant icing black with black food colouring)

Method

  1. Preheat the oven to 180°C.
  2. Line a 12-hole cupcake tin with cupcake cases.
  3. Measure all the ingredients into a bowl or food processor and beat together until smooth.
  4. Spoon the mixture into the cases.
  5. Bake for about 18-20 minutes until well risen and lightly golden on top.
  6. Place the muffins on a wire rack to cool.
  7. Colour half the frosting green using some of the food colouring.
  8. When the muffins are completely cool, swirl the green icing on top of the muffins using a piping bag with a plain nozzle.
  9. Make small balls of white fondant icing and flatten them to make the whites of the eyes.
  10. Make smaller balls of black icing and flatten them to make the pupils of the eyes. Roll out some black icing and use to make eyebrows and moustaches.

Pumpkin muffins

*Makes 12 Pumpkin Muffins

Create different faces on these scary pumpkin muffins.

Ingredients

  • 225g plain flour
  • 1 tbsp baking powder
  • 125g butter softened
  • 125g caster sugar
  • ¼ tsp salt
  • 1 egg
  • 200 ml milk
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 100g sultanas
  • 125g pumpkin, peeled and grated

Decoration

  • 1 tub ready-made buttercream
  • Orange food colouring
  • Chocolate flavoured Writing icing
  • 150 g ready to roll white icing
  • Green food colouring
  • Brown food colouring

Method

  1. Preheat the oven to 180°C Fan.
  2. Line a 12 hole muffin tin with muffin cases.
  3. Measure all the ingredients into a free standing electric mixer. Whisk until blended.
  4. Spoon the mixture into the cases.
  5. Bake for about 20 to 25 minutes until well risen and lightly golden on top.
  6. Remove the muffins from the muffin tin and leave on a wire rack to cool completely.
  7. Then colour 2/3 of the ready to roll icing green and 2/3 brown.
  8. Roll out the green icing and shape into 12 leaves, use a toothpick to draw the veins on the leaves. Shape the brown icing into 12 stalks.
  9. Colour the buttercream orange and spread the icing over the cupcakes.
  10. Decorate with eyes, noses and mouths using the chocolate flavoured writing icing and then add the leaves and stalks to the pumpkins.
