Must-try gourmet sandwiches

Instead of the tired old ham-and-cheese combination, try one of these delicious gourmet sandwiches for lunch.

Caprese open sandwich

*Makes 4


  • 4 slices Sasko Wholegrain Low-GI Health Bread
  • 1tsp pesto
  • 3tbsp mayonnaise
  • 300g mozzarella (sliced)
  • 250g cherry tomatoes (sliced)
  • 1 handful of fresh basil leaves
  • Balsamic glaze/reduction
  • Olive oil
  • Salt and pepper


  1. Mix the pesto and mayonnaise together.
  2. Either toast the bread or leave it fresh and soft if you prefer.
  3. Spread a generous layer of the pesto mayonnaise onto each slice.
  4. Layer each slice with mozzarella and basil leaves.
  5. Top with cherry tomatoes and drizzle over a little balsamic glaze and olive oil.
  6. Finish with a pinch of salt and pepper.

Brie, avocado and walnut open sandwiches

*Makes 2


  • 2 slices Sasko Plus Cranberry Brown Bread
  • Butter
  • 125g brie cheese (at room temperature)
  • 1 avocado
  • 20g walnuts (crushed)
  • 20g rocket

To serve:

  • Salt and pepper
  • Olive oil and balsamic reduction


  1. Lightly toast the cranberry brown bread slices before spreading each with a little butter.
  2. Top with slices of brie, followed by slices of avocado, a sprinkling of walnuts and a little rocket.
  3. Season with salt and pepper and, if you’re feeling decadent, a drizzle of olive oil and balsamic glaze.
