These yummy Mother’s Day sweet treats can be prepared in less than 30 minutes, and they’re so easy to make, even dad can try his hand at them!

Banana pecan crumpets

For flavour-packed crumpets, try this delicious banana and pecan combination.

Prep time: 15 minutes

Baking time: 15 minutes

Ingredients

  • 500g Snowflake Easymix Flapjack mix
  • 30ml cooking oil, extra for frying
  • 2 extra-large eggs
  • 500ml milk
  • 1 medium banana, mashed, extra slices to decorate
  • 25g pecan nuts, finely chopped, extra to serve
  • Syrup

Method

  1. Prepare the Snowflake Easymix Flapjack mix as directed on the pack, using the oil, milk and eggs, to create the batter.
  2. Mix in the mashed banana and nuts.
  3. Leave to stand for about 20 minutes. If the batter is too thick, add a little extra milk.
  4. Heat oil in a large, heavy-based frying pan. Drop tablespoons of the batter into the pan. When bubbles appear on the surface of each flapjack, turn it over and fry on the other side until golden brown.
  5. Remove the flapjacks from the pan and drain on a paper towel. Serve immediately with syrup, banana slices and a sprinkling of nuts.

Mini chocolate cups

Whip up bite-sized, fudgy creations that mom will find hard to resist.

Prep time: 20 minutes

Baking time: 7 minutes

Ingredients

  • 500g Snowflake Easymix Chocolate Muffin mix
  • 2 extra-large eggs
  • 200ml water
  • 160ml cooking oil
  • 5ml vanilla essence

For the chocolate butter icing

  • 60g butter or margarine, softened
  • 130g icing sugar, sifted
  • 30ml cocoa powder
  • 3ml vanilla essence
  • 15ml milk
  • Grated dark chocolate, to garnish

Method

  1. Prepare the Snowflake Easymix Chocolate Muffin mix as directed on pack, adding the vanilla essence to the wet ingredients.
  2. Spoon the mixture into mini paper cups, filling each about two-thirds full.
  3. Bake in a preheated oven at 180˚C for about 7 minutes. Turn out on to a wire rack to cool.
  4. For the icing, beat the butter and icing sugar together. Add the remaining ingredients and beat to a smooth, spreadable consistency. Pipe the icing onto the cooled mini cups and top with grated chocolate.

Chelsea buns

Make sure mom’s morning tea is extra special with deliciously warm, homemade Chelsea buns.

Prep time: 10 minutes

Baking time: 20 minutes

Ingredients

  • 500g Snowflake Easymix Scone mix
  • 2 extra-large eggs
  • 100ml cooking oil
  • 160ml milk
  • 30g butter, plus extra melted to top the buns before baking
  • 100g raisins
  • 1 tsp finely grated lemon zest
  • 2 tsp ground cinnamon
  • 50g soft brown sugar

For the icing

  • 1 cup icing sugar
  • 1 tbsp warm water

Method

  1. Prepare the Snowflake Easymix Scone mix as instructed on the pack.
  2. Roll out the scone dough and sprinkle over the raisins and lemon zest.
  3. Shape the dough into a tight cylinder and slice into even rounds.
  4. Brush each piece with melted butter and sprinkle with the cinnamon and sugar.
  5. Mix the water and icing sugar until smooth. Spread the icing on to the bottom of a casserole dish and place the rounds of dough on top.
  6. Bake for 20 minutes or until lightly browned. Allow to cool before turning out the buns on to a cutting board. Sprinkle with more cinnamon sugar if desired.
