Low-fat tuna and sweet chilli with spring onion and rocket
Mix a can of tuna with a couple of tablespoons of sweet chilli sauce, a tablespoon of low-fat mayo, one chopped spring onion, and rocket leaves. Roll it up in wraps and enjoy.
Mix shredded cooked or smoked chicken with a teaspoon of curry paste, a few tablespoons of mayo, chopped soft apricots and one stick of celery. Use to fill rolls or wraps.
Calamari goujons and tzatziki
Fry or oven bake calamari until it’s crispy and golden, and drain it on a paper towel. Fill rolls with butter lettuce, tzatzki and the calamari. Alternatively, you can use hake or other firm white fish.
Mini meatballs with peppadew or tomato relish
Make some mini meatballs, fry them in a bit of oil, and toss in some peppadew or fruit chutney mixed with a little bit of tomato sauce. Place on some fresh rolls, and enjoy.
