Vanillia Icing

  • 125g butter, softened
  • 560ml icing sugar, sifted
  • 2 tsp vanilla essence
  • 30ml milk

  1. Preheat the oven to 180°C. Line four large baking trays with baking paper.
  2. Using an electric mixer, beat the butter, sugar and vanilla until light and fluffy. Add the eggs, one at a time, beating well after each addition. Meanwhile, sift flour, cocoa, bicarbonate of soda and baking powder into a large bowl.
  3. Add the flour mixture to the butter mixture. Stir to combine. Add half the buttermilk. Stir to combine. Repeat with remaining flour mixture and buttermilk until just combined.
  4. Pipe R5 coin-sized blobs of mixture onto prepared trays 5cm apart to allow room for spreading.
  5. Bake one tray at a time for 8 – 10 minutes. Transfer to a wire rack to cool. Repeat with remaining trays.
