5 home-cooked meals you can make in 20 minutes or less

To get your fussy eaters more interested in the food they’re eating, get them involved in the kitchen and food preparations so they know what’s gone into making it.

*Makes 8

Ingredients

  • 8 sausages
  • Roll of puff pastry

Method

  1. Preheat the oven to 180°C and grease a large baking tray.
  2. Roll out the pastry on some flour so it doesn’t stick to the surface, then divide into 8 blocks.
  3. From one corner to the next, roll your sausage inside each pastry block.
  4. Secure the pastry with a toothpick, then brush lightly with some milk and bake until golden brown.

Cheesy meatballs and mash

Your kids will love the cheesiness of these meatballs and won’t even notice the secret vegetable sauce that’s packed with nourishing ingredients.

*Makes 24 golf-size meatballs
Suitable for freezing

Ingredients

  • 500g lean mince
  • 7 cream crackers
  • 2 tsp Dijon mustard
  • 1 onion, finely chopped
  • 1 large egg
  • 1 tsp dried oregano
  • 1 sprig fresh rosemary, finely chopped
  • 24 dice-size cubes Cheddar cheese

Method

  1. Smash cream crackers until they’re fine.
  2. Add to a bowl with mince meat, mustard, and herbs.
  3. Crack in the egg and season.
  4. With clean hands, mix until all ingredients are combined.
  5. Divide into 4 large balls, divide each ball into 6 smaller balls.
  6. With wet hands, place a cheese cube in the center of the ball.
  7. Drizzle the balls with olive oil and place in the fridge.
  8. In a little olive oil, fry them until golden brown and cooked.
  9. Serve with mashed potato and vegetable sauce. See recipe below.

Cheesy meatballs and mash

Secret veggie sauce

Ingredients

  • 1 small onion, finely chopped
  • 2 gloves garlic, crushed
  • 1 tin whole tomatoes
  • 1 tin tomato paste
  • 1 carrot, grated
  • 1 celery stork, finely chopped
  • 1 tsp sugar
  • 150ml water

Method

Place all ingredients into a blender or mixer and purée for your fussy eater.

Chicken and cheese pasta bake

*Serves 5-6

Ingredients

  • 1 rotisserie chicken
  • 400g tortigliono or rigatoni
  • 200ml fresh cream
  • 1 cup grated cheese

Vegetable sauce

  • 1 small onion, finely chopped
  • 2 gloves garlic, crushed
  • 1 tin whole tomatoes
  • 1 tin tomato paste
  • 1 carrot, grated
  • 1 stork celery, finely chopped
  • 1 tsp sugar
  • 150ml water

Method

  1. Roughly chop the chicken without the skin.
  2. Preheat the oven to 180°C.
  3. Cook the pasta until just tender.
  4. Fry the onion and garlic.
  5. Add to vegetable sauce.
  6. In a big mixing bowl, add the pasta, chicken, vegetable sauce and fresh cream.
  7. In a deep baking dish spoon in the mixture, top with cheese and bake for 15 minutes, until golden and heated through.

Broccoli and cheese quiche

*Makes 8 small quiches

Ingredients

  • ½ cup broccoli heads –finely chopped
  • 4 eggs
  • ½ cup grated cheese
  • 8 streaks of cooked bacon
  • Pinch of salt
  • 2 tbsp of milk

Method

  1. Preheat the oven to 180°C
  2. Place the ham slices in a greased muffin tin.
  3. Beat the eggs and milk together, then add the rest of the ingredients.
  4. Spoon the mixture into the ham cups and cook for 15 minutes.

Easy fish cakes

*Makes 20 fish cakes
Suitable for freezing

Ingredients

  • 500g hake fillets (skinless and deboned)
  • 1 onion, finely chopped
  • 4 potatoes
  • 1 egg
  • 2 tbsp flour
  • 5 ml salt
  • 5 ml lemon juice
  • Olive oil for frying

Method

  1. Break up hake fillets with a fork, squeeze out most of the liquid and place in a mixing bowl.
  2. Add the cooked baby potatoes to the fish and mash together.
  3. Add the rest of the ingredients and mix through.
  4. Heat a non-stick pan and add a little olive oil.
  5. Form small balls (about the size of a golf ball) with your hands and flatten.
  6. Fry a few at a time until golden brown on both sides.
