4 must-try pizza recipes perfect for Father’s Day

Show Dad just how special he is with a delicious pizza-themed lunch.

Father's Day pizzas

Do something a little different than the usual braai for dad this Father’s Day. Get the kids in the kitchen and whip up these creative pizza recipes – he’ll love every bite.

Pizza dough recipe (use as base for all recipes below)

Ingredients for dough:

  • 2 cups flour
  • 2 tsp instant yeast
  • 1 tsp sugar
  • ½ tsp salt
  • ¾ cup lukewarm water
  • 1 tbsp olive oil

Method:

  • In a large bowl, mix the flour, yeast, sugar and salt together.
  • Add the water and olive oil and mix until a sticky dough forms.
  • Knead until the dough becomes soft and pliable.
  • Cover and let it rise in a warm area for about 15 to 30 minutes until doubled in size.
  • Pre-heat oven to 220°C for at least 20 minutes.
  • On a well-floured surface, roll out into a round shape.
  • Transfer to a large baking tray lined with baking paper.
  • Bake at 220°C for 12 to15 minutes, or until golden brown and thoroughly cooked.

How to put it together

  • Using the corresponding shaped cookie cutters or a pastry cutting wheel, cut out the following shapes: seven hexagonal shapes, six triangles and six thick rectangles.
  • Place one hexagonally shaped pizza piece in the centre of a round white ceramic dish.
  • Arrange six hexagonal pieces around the central piece, leaving space between all the shapes.
  • Create a border with the remaining pizza pieces, alternating between the triangles and rectangles.
  • Smear on Mediterranean Delicacies Sundried Tomato Pesto.
  • Add cheese and your choice of toppings such as olives, anchovies, prawns or salami.

The rugby ball

This can be done either as a pizza or as focaccia bread. Focaccia bread is very similar to a regular Italian pizza, but is usually a bit thicker and stuffed or topped with herbs and/or other ingredients.

Ingredients for toppings

  • 2 tubs Mediterranean Delicacies Sundried Tomato Pesto
  • 2 tubs Mediterranean Delicacies Grated Parmesan Style Cheese
  • 10 olives, halved and stoned
  • Mediterranean Delicacies Danish Feta chunks
  • 1 tub Mediterranean Delicacies Pine Nuts
  • Extra virgin olive oil

How to put it together

  • On a well-floured surface, roll the dough out into an oval shape.
  • Transfer to a large baking tray lined with baking paper.
  • Spread with pesto, and then use the blunt back-end of a knife to poke holes in the surface (or use your fingers).
  • Sprinkle with Parmesan, top with olives, feta and pine nuts.
  • Bake at 220°C for 12 to15 minutes, or until golden brown and thoroughly cooked.

Serve hot with a drizzle of extra virgin olive oil, Hummus for dipping and some salt flakes and freshly ground black pepper.

Ingredients for toppings

  • 2 tubs Mediterranean Delicacies Sundried Tomato Pesto
  • 2 tubs Mediterranean Delicacies Grated Parmesan Style Cheese
  • Sundried Tomatoes
  • Olives
  • Anchovies
  • Feta cheese
  • Grilled asparagus
  • Red jalapeno

How to put it together

  • On a well-floured surface, roll out into a round shape.
  • Outline a heart shape with food marker.
  • Cut away the excess dough with a pastry cutting wheel.
  • Add your choice of toppings.
  • Transfer to a large baking tray lined with baking paper.
  • Bake at 220°C for 12 to15 minutes, or until golden brown and thoroughly cooked.
  • Serve on a wooden board garnished with jalapeno and lettuce.

Ingredients for toppings

  • 2 tubs sundried tomato pesto
  • 2 tubs grated Parmesan cheese
  • Feta cheese
  • Coriander or basil pesto
  • Olives
  • Sundried tomatoes

How to put it together

  • Roll the dough out into a large rectangle.
  • Smear with sundried tomato
  • Add the cheese topped with the coriander or basil pesto.
  • Create goals and lines by sprinkling feta cheese.
  • Create the two “teams” with olives and sundried tomatoes.

Serve on a large white ceramic plate or wooden board with lettuce
