Waffles with Pears and Berries

Makes 4
Ingredients:
750ml all-purpose flour
125ml corn flour
15ml baking powder
5ml salt
3 eggs, separated
750ml full-cream milk
10ml vanilla essence
45ml sunflower oil
30ml white sugar
For the topping
2 pears
150g sugar
100ml cream
1 vanilla pod
Method
1. Preheat the oven to 180ºC. To make the waffles, mix together the flour, corn flour, baking powder and salt in a large mixing bowl.
2. In a large jug, combine the egg yolks, milk, vanilla essence, oil and sugar.
3. Mix well and add to the dry ingredients.
4. Stir until a smooth batter is formed (without lumps).
5. Add the egg whites and gently stir to incorporate them.
6. Lightly grease a waffle iron or a small, heavy-based non-stick frying pan (with metal handle). Pour in the batter and bake in the oven until lightly browned and risen (about 25 minutes).
To make the topping
1. Preheat the oven to 200ºC.
2. Core the pears and place them in the oven on a roasting tray. Cook until soft (about 20 minutes).
3. In the meantime, prepare the vanilla caramel sauce. Dissolve the sugar in the cream, and bring it to a gentle boil. Remove from heat. Using a knife, scrape the seeds from a vanilla pod into the sauce (or use vanilla essence). Stir well to infuse the flavours.
4. Serve the waffles with the roughly chopped roasted pears, and drizzle with the vanilla caramel sauce.
