Fruit popsicles

Orange Juice and Mango Popsicles

*Makes 6

Ingredients
  • 2 large mangoes, peeled, with their stones removed, and finely chopped
  • 500ml orange juice
  • 30ml fresh mint
Method
  1. Place all the ingredients in a blender or food processor and blend either until smooth or slightly chunky, depending on your child’s taste.
  2. Divide evenly into six popsicle moulds, and then insert a popsicle stick and freeze until solid.

Mixed Berry and Vanilla Yoghurt Popsicle

*Makes 6

Ingredients
  • 500ml vanilla yoghurt
  • 100g frozen mixed berries
  • 30ml honey
Method
  1. Place all the ingredients in a blender or food processor and blend either until smooth or slightly chunky, depending on your child’s taste.
  2. Taste for sweetness (berries can be a little sour) and add more honey if necessary.
  3. Divide evenly into six popsicle moulds, and then insert a popsicle stick and freeze until solid.

Sparkling Water and Gooseberry Popsicles

*Makes 6

Ingredients
  • 500ml sparkling water
  • 200g gooseberries
  • 80ml flavoured syrup
Method
1. Mix the sparkling water with the flavoured syrup.
2. Pour a little (about ¼ of the way up) into each mould followed, by a gooseberry, and freeze solid.
3. Pour the next level of flavoured sparkling water (about ½ of the way up), and drop in another gooseberry. Freeze solid.
4. Repeat this process until the popsicle moulds are full. Serve frozen solid.
