Colourful toddler bobotie

One medium serving dish or six individual portions
Preparation time: 20 minutes
Cooking time: 1½ hours

Ingredients
10ml olive oil
1 onion, finely chopped or grated
500g extra lean beef or lamb mince
1 tsp (5ml) turmeric
1 tsp (5ml) ground coriander
1 tsp (5ml) ground cumin
1 tbsp (15ml) currants
1 cup (250ml) mixed peppers, diced
1 thick slice white bread
1 cup (250ml) milk
2 eggs

Method

1 Preheat the oven to 180?C. Gently heat the olive oil in a large saucepan and sauté the onions until soft. Add the mince and cook until browned.
2 Stir in the spices, currants and mixed peppers, and cook for another 5 minutes before removing from the heat.
3 Soak the white break in the milk and drain well. Mash the soaked bread with a fork and add to the mince mixture. Whisk together the milk and eggs, and set aside.
4 Scoop the mince into an ovenproof dish or six ramekins and bake for 40 minutes. Remove from the oven and pour over the egg and milk mixture, before baking for an additional 15 – 20 minutes, or until the egg-custard topping is cooked.
5 Serve with yellow rice, fruit chutney and sliced banana.
