Fruity Rice Crispy Bars

Makes 24 bars

Pippa says: “These are to be treated as a once-a-week snack/treat only, and are not to be eaten daily.”


INGREDIENTS
¼ cup canola margarine
250g marshmallows
1 tsp vanilla essence
5 cups rice cereal (plain – not flavoured!)
½ cup dried cranberries
½ cup raisins
½ cup dried mango, chopped

METHOD
1. In a large pot, melt the margarine, add the marshmallows and vanilla essence, and stir until smooth (the mixture might foam up a bit, so just keep stirring it).
2. Add the rice cereal and dried fruit, and mix until well coated and combined.
3. Press the mixture into a greased baking tray, and allow to cool completely before cutting it into squares.
