Pumpkin fritters

These little fritters freeze well and can be made without the additional sugar in the batter for a super-healthy treat!

Makes about 50 mini fritters
Preparation time: 15 minutes
Cooking time: 20 minutes + frying

Ingredients
500g pumpkin, cut into cubes
½ cup (125ml/50g) self-raising flour
1 egg
1 tbsp (15ml) sugar
Pinch of salt
Butter or oil for frying
Cinnamon sugar to serve

Method

1 Boil the pumpkin for 20 minutes or until soft. Drain, mash and allow to cool.
2 Add the self-raising flour, egg, sugar and salt to the pumpkin mash, and mix well.
3 Heat some butter or oil in a non-stick pan and drop teaspoonfuls of the batter into the pan. Fry until no longer visibly moist on top (about 3 minutes) and gently turn over to cook the other side.
4 Serve sprinkled with cinnamon sugar.
