Hearty chicken noodle soup
Serves
Ingredients
4 chicken breasts
2 leeks, sliced
1 onion, chopped
2 baby marrows, grated
1 butternut, grated
2 carrots, grated
1 tablespoon mixed dried herbs
2 tablespoons low-salt chicken or vegetable stock
3 litres water
Method
1. Heat a little olive oil in a pot and fry the leeks and onion until soft.
2. Add the chicken, carrots, marrows, butternut, herbs and water, and bring to the boil.
3. Reduce the heat to medium and skim the fat from the surface.
4. Add the stock powder and simmer for 45 minutes until the chicken is cooked and falls off the bone.
5. Season with black pepper and a little more stock powder if needed.
6. Cool slightly before removing the chicken, "stripping" the meat from the skin and bone, discard the skin and bones, return the chicken to the pot, and add noodles of your choice or pasta shapes.
7. Serve with crusty bread.
