Cheesy Sweetcorn and Chicken Mini Loaves

These mini loaves will keep for a few days in the fridge, and are delicious served cold with a salad for lunch, or as part of a picnic. However, they don’t freeze well.
1/3 cup dry wholewheat breadcrumbs or fine oats
900g chicken mince
1 clove garlic, crushed
1 egg, beaten
¾ cup fresh or frozen sweetcorn kernels
½ cup white cheddar cheese, grated
1 tbsp dried mixed herbs
1. Preheat oven to 180?C. Grease an 8-mini-loaf-tin tray
2. Mix all the ingredients together in a bowl and divide equally between the mini loaf tins.
3. Bake for 20 minutes until cooked through.
4. Serve hot or cold
