Ingredients
4–6 organic lamb loin chops
Extra virgin olive oil
Maldon sea salt
30 organic rocket leaves, chopped
4 large organic potatoes, peeled
100ml organic low-fat milk
30g organic unsalted butter
Method
Season lamb chops and set aside.
To make the mash, boil the potatoes in salted water until soft when pierced with a knife. Drain and add the chopped rocket.
Heat the milk with the butter until boiled and remove from heat. Add a little at a time to the potatoes. Using a potato masher, mash to
a smooth consistency and season.
Grill the lamb chops for 8 minutes on each side or until cooked to your liking. Serve with the mash, drizzled with a little olive oil.
