Organic lamb chops with rocket mash

*Serves 4

Ingredients
  • 4–6 organic lamb loin chops
  • Extra virgin olive oil
  • Maldon sea salt
  • 30 organic rocket leaves, chopped
  • 4 large organic potatoes, peeled
  • 100ml organic low-fat milk
  • 30g organic unsalted butter
Method
  1. Season lamb chops and set aside.
  2. To make the mash, boil the potatoes in salted water until soft when pierced with a knife. Drain and add the chopped rocket.
  3. Heat the milk with the butter until boiled and remove from heat. Add a little at a time to the potatoes. Using a potato masher, mash to

  5. Grill the lamb chops for 8 minutes on each side or until cooked to your liking. Serve with the mash, drizzled with a little olive oil.
