Fruit and nut quinoa porridge or dessert

FRUIT AND NUT QUINOA PORRIDGE OR DESSERT
Quinoa is actually a seed, although it’s cooked and used like a grain, and is very easy to prepare. Cooking quinoa is just like cooking rice. Don’t be alarmed by its odd-looking appearance – it’s extremely tasty in dishes and has a slightly nutty texture. Give it a try!

Serves 4
Prep time: 25 minutes and 5 minutes
to stand

INGREDIENTS
1 cup whole quinoa
2 cups boiling water

?METHOD
1. In a large pot, toast the quinoa for 5 minutes until fragrant and lightly browned.
2. Add 2 cups boiling water.
3. Cover the pot, reduce heat, and simmer for approximately 15 minutes or until liquid has been absorbed and the grains are swollen and soft.
4. Let it stand for 5 minutes and then “fluff” it with a fork to break up the clumps.
5. Add dried fruit and spices to taste, and serve as a dessert or breakfast porridge.

VARIATIONS
Add spices such as cinnamon, ginger and vanilla, and also fresh or dried fruits like apricots, dates and finely chopped nuts
(if safe and age-appropriate for your child), as well as pumpkin and sesame seeds.
